Melsted Badehotel x Frederik Bille Brahe

Summer kitchen at Melsted Badehotel this year will be driven by Frederik Bille Brahe. Frederik qualified from restaurant Kong Hans and Sketch in London, he previously worked at Saison, but is now the man behind the unique restaurant café Atelier September in Copenhagen K, as well as several exciting pop-up restaurant constellations later in Tokyo.

Frederick has selected a young, exuberant and talented team. On a daily basis will chef Jonathan Zeuthen Knoll manage the kitchen, he is assisted by the talented student Mimi Møller Olesen.

The focus is on integrity and crafts, while Frederick and team creates beautiful, simple and synergistic flavors, with Bornholm fantastic range of commodities. The restaurant's guests can expect a simple but creative and elegant dining experience in an informal setting, while Frederick and Melsted Badehotel invite the island's guests and locals to enjoy the laid-back summer dinners.
